Ohhhh ya know… just the cookbook of a Mom with a Ohhhh ya know… just the cookbook of a Mom with a Type 1 Diabetic Child… 
Let me explain!
The absolute easiest and most accurate way to calculate carbohydrates in a home cooked (or home baked) dish is this… 
CARB FACTORS! 
Haven’t heard of it???  Not surprised. Mark this down as Item #1,081 of the things they don’t teach you when your Child is diagnosed… 
It is the % of carbs by weight of the dish.  It’s how you will determine how many carbs are in that slice of Lemon Raspberry Brunch Cake...
Sounds complicated, but it’s not!
Here’s what you do:
➡️ Weigh the empty baking dish
➡️ Prepare what you’re making and cook it 
➡️ Total up all the carbs from the recipe (it is best if you weigh your ingredients instead of measuring - but if you keep it consistent, I personally think it’s ok to do either way). 
➡️ Once the dish is cooled, or cooled enough, weigh the cooked dish.  If it is still a little hot, put a pot holder on the scale and then zero it out.  Write down the weight in grams of the cooked, prepared dish.
➡️ Subtract the weight of the empty dish from the cooked weigh. 
➡️ Take the total carbs and divide it by the food weight. 
This number is your CARB FACTOR.  
➡️Cut, slice, scoop your child’s portion and weight it (minus plate or dish - just including that for clarity!)
➡️Take the weight of the serving and multiply it by the carb factor. This is the grams of carbs that are in that serving.  
In this example, the carb factor is .28
The portion I gave my son weighed 63g x .28 = 17.64g carbs for that serving.  
Seems like a lot, I know… but.  This is our reality as Moms raising Type 1 Children.

I am becoming more concerned with the availability of food items and the hike in prices.  
And it makes me nervous.
Sure, our kids can eat anything and survive, but low carb items are a necessity and those are usually fresh (veggies / fruit / meat) and pricey!  
When I posted in my stories the other day, a few of you messaged me about friends with farms expressing concern on their side as well.  
I’ve made a list of items that I am starting to grab.
I’m not going crazy or all "end of world” - just grabbing a few things extra each week is all.
