Zero Carb French Toast

These are the perfect late night snack for T1's, or when you don't want to send your BG through the roof with regular French Toast. Top with Sugar-Free Syrup to complete this breakfast or dessert. Be sure to count your own syrup carbs!

Equipment

  • All-Edges Brownie Pan

Ingredients
  

  • 1 8 oz block of cream cheese at room temperature
  • 8 eggs
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp vanilla

Instructions
 

  • Set cream cheese on counter to soften. It must be room temperature! But do not leave out for more than 2 hours.
  • Preheat oven to 350 degrees.
  • Grease muffin tin. The "All Edges" brownie pan works VERY WELL.
  • Add all ingredients to blender, and blend until smooth. Scrape down the sides and blend again. Pour into pan.
  • Bake for 20-25 minutes.
  • Let them cool in the pan for 10 minutes and remove.
  • If you are eating them right away, enjoy! Top with butter and sugar-free syrup.

Notes

If you are storing them. Remove from pan and allow them to cool completely. Store in the fridge for up to 4 days, or in the freezer. To reheat, place on a plate in the microwave for 30 seconds to 1.5 minutes. Top with butter and syrup of your choice.
